Menu: Feb. 21st - 24th

 MONDAY

BBQ Pork w/ Rice Noodles
Grilled pork with an Asian BBQ sauce served with rice noodles, greenleaf & iceberg lettuce, fresh slaw, scallions, peanuts and fish sauce.  


TUESDAY


Vietnamese Burgers and Spring Rolls


"Loved the sliders and everything about the layers of goodness - cilantro, sauce, jalapenos, slaw....everything!" - Amy  

There's just so much to this, so I'm just going to list the details:
  • 4 Mini burgers made of ground turkey marinated with scallions, carrots, garlic, and fish sauce.  
  • Whole wheat buns
  • Sweet Slaw (No mayo.)
  • CGOA (Cilantro Garlic Olive Oil Aioli- A bit of mayo replaced with a whole lot of garlic, cilantro and olive oil)
  • 4 Spring Rolls:  Honey Ginger Chicken, Loads of Veggies, Whole Wheat Noodles & Peanut Sauce
When I served this one night, my son looked at me as if I was serving cake and ice cream for dinner.  What a fantastic meal and treat at the same time.


 WEDNESDAY



                   
Greek Chicken Salad w/ Penne Pasta & Spring Salad

Large cubes of tender juicy chicken breasts tossed with a Greek garlic and herb yogurt sauce.  The yogurt used here is fat free and cholesterol free!  Enjoy this with a whole wheat penne salad and a spring salad mix with roasted pecans, feta and a honey mustard vinaigrette.


THURSDAY


Lemongrass Ribs w/ Sweet Slaw 
& Scallion Fried Rice
*2/25 or 4/$45*

Baby back ribs marinated in a lemongrass barbecue sauce and sloooowly cooked until the meat nearly falls off the bone.

TUESDAY

Crispy Shrimp w/ Pad Thai Noodles 
*2/$25 or 4/$45

Crispy fried shrimp on top of Pad Thai Noodles and a bed of green leaf, red/green cabbage and carrots.  Garnished with crushed peanuts, scallions, cilantro and a sweet-n-tangy coconut dressing.
Make sure you place the shrimp in the oven at 350/375 for a few minutes until crispy again. 
(Pad Thai noodles contain peanuts in the sauce.  Not recommended for those with peanut allergies.)




WEDNESDAY


Chicken Piccata Spaghetti w/ Grilled Pear Spinach Salad

"The chicken piccata was fantastic!  We LOVE the grilled pear salad.  For
once, we actually finished all the salad." - Irene

Get ready for a delightful combination of flavors on your plate!  Garlic sauteed chicken breasts with a creamy white wine caper sauce over spaghetti (you won't believe it's actually whole wheat!).  Although no picture available, the spinach salad can stand on its own.  Spinach, grilled pears, roasted pecans, artichoke hearts and feta tossed with a white wine vinaigrette.

& Napa/Red Pepper Salad w/ Orange Ginger Dressing
