MENU: Wednesday (April 18th)



Lemongrass Chicken w/ Steamed Rice & Veggie Stir Fry

Get ready for a fantastic fantastic treat.  This is old school lemongrass chicken.  You may have a hard time finding this at restaurants.  Skinless chicken thighs are deboned then cooked with the bones, carmelized onions, garlic and lemongrass until it looks like what you see in the pic- a sweet, savory pot of tender chicken sitting in a sauce that I call liquid gold.  You will want to pour it all over your rice it's so good.  This is a dinner I can guarantee you will not have any leftovers. 



Saigon Sliders and Crispy Wonton Slaw

Two mini turkey burgers made of ground turkey marinated with scallions, carrots, and garlic on two whole wheat buns with sweet slaw, pickled jalapenos and cilantro mayo.  I will also be introducing a new crispy wonton slaw. It's hard for me to stop eating this once I start!

Stuffed Flounder w/ Pesto Penne & Roasted Veggies
*2/$25

Flounder fillets stuffed with shrimp, red peppers, onions, and mozzarella.
Served with pesto penne,  roasted veggies and a red pepper vinaigrette.


Bacon Wrapped Pork Tenderloin 
Mint Lime Basmati, Salad w/Pineapple Salsa

I can't say enough about how heavenly it is to combine a deliciously marinated meat with an unbelievably light and refreshing salad and a fragrant rice in the spring/summer months.  Enjoy every bit of this!

Greek Chicken Salad w/ Penne Pasta & Spring Salad

Large cubes of tender juicy chicken breasts tossed with a Greek garlic and herb yogurt sauce.  The yogurt used here is fat free and cholesterol free!  Enjoy this with a whole wheat penne salad and a spring salad mix with roasted pecans, feta and a honey mustard vinaigrette.


Kung Pao Chicken Noodles 


"I absolutely LOVED your take on the Kung Pao Chicken! It was delish!! And since it was homemade with fresh ingredients, I'm sure it was WAY healthier than take-out. I don't have to feel bad about eating KP Chicken, and it's one of my favorites. So thanks!!" - Amy
 
Crispy chicken tossed with a savory sweet kung pao sauce and peanuts.
Served with stir fried veggies and noodles. (Peanuts packed separately)


 To reheat chicken, place in oven at 350/375 for a few minutes til crispy.  If you want to and have the time, you can also throw the peanuts in there to for a few minutes to "wake" them up.

MENU: Wednesday (March 21st)

Jamaican Pulled Pork w/ Cilantro Rice, Plantain Hush Puppies & Ginger Slaw

Pork shoulder rubbed ridiculously with every spice that's Jamaican, (you name it, it's in there!) -then slowly cooked til it pulls itself!  Pair this with aromatic cilantro garlic rice, sweet and crispy plantain hush puppies and a light and delicious ginger slaw! 



Crispy Coconut Shrimp w/ Rice Noodle Salad
*2/$25

This is my favorite coconut shrimp recipe.  You will melt when you bite through the crunchy coconut cookie-like crustPair this with light and refreshing rice noodles and a variety of greens and herbs.  Garnish with fish sauce dressing and peanuts. 


These are both new fabulous dinners.  I can't wait to share this with you all!

Hoisin Salmon w/ Baby Bok Choy & Sesame Ginger Noodles

"The salmon melted in my mouth (and my kids mouths). They loved it! I liked the fresh spinach too. The noodles were delicious. I was surprised that the kids liked the noodles because I tried switching to whole wheat before and they did not eat it.  I would have rank this dinner at the top along with the meatballs." - Ramona

-Salmon marinated in hoisin sauce
-Baby Bok Choy sauteed with garlic and ginger slivers
-Whole Wheat Noodles tossed with light olive oil
-Sesame Ginger Sauce

Instructions:

Reheat salmon in oven at 350 or lightly reheat in microwave. You can either eat the noodles at room temp or warm.  Place noodles in a bowl and toss with dressing. Then top with baby bok choy, salmon, sesame seeds and drizzle some more dressing on top as well.

Caribbean Chicken w/ Basmati, Mango Salsa 
& Peanut Ginger Salad 
Grilled chicken breasts with a sweet, tangy, spicy and very flavorful mango jerk marinade.  Comes with mango salsa, basmati rice with a hint of coconut and a side salad with peanut ginger dressing.

MENU: Wednesday (March 7th)



Grilled Vietnamese Meatballs w/ Rice Noodles

"The meatballs were very delicious. Even my 2 kids (who really only like chicken nuggets) loved them. The combination of rice noodles, salad and fish sauce blended very well."--Ramona

"Ai, everyone I shared my dinner with last night thought the meatball dinner was delicious! I know I will be ordering more for my family and friends. My husband who was skeptical to eat food that "he did not know where it came from"  ate it and WOW, was he surprised. He asked me for more dinner which I had no more. Ground Turkey marinated with fish sauce, garlic, onions, carrots and scallions, formed into meatballs and grilled. Enjoy with rice noodles on top of a bed of greens, and shredded red/green cabbage, and carrots. Topped with scallions, cilantro, crushed peanuts and Vietnamese fish sauce vinaigrette.

* Peanuts packed separately.

Instructions:

Place greens on bottom, followed by rice noodles and meatballs. 
Top with crushed peanuts, scallions, cilantro and fish sauce.

MONDAY
 


Kung Pao Chicken Noodles

TUESDAY

 Bacon Wrapped Pork Loin w/ Garlic Angel Hair
& Apple Pecan Salad

"Just wanted you to know that my husband and I loved this meal! It sounded like it was my husband's favorite out of everything he's had so far from you. I think that everything went really well together & the portions were great, btw - the topping was perfect!" -

Pork loin wrapped in bacon then pan seared and topped with a reduction made of caramelized onions, apples and red wine. Honey mustard vinaigrette for the salad. 
 

WEDNESDAY
Curry Dill Tilapia w/ Rice Noodles 

2/$25
A peanut, scallion and dill sauce on top of curry rubbed tilapia with rice noodles, cucumber lettuce mix and fish sauce.  Very delicious! Very healthy!


THURSDAY
 
Bang Bang Shrimp Tacos

2/$25

Soft tacos with crispy shrimp tossed with a spicy creamy Bang Bang sauce over cilantro rice, black beans, tomatoes, salad and a cumin cilantro sauce.   
Reheat shrimp in oven for a few minutes at 350/375 until crispy and lightly reheat tacos in microwave or oven covered up.
