MONDAY


Shrimp & Crab Mozzarella w/ Basil Veggie Orzo
& Grilled Garlic Bread

Shrimp and lump crab meat combined with mozzarella, spinach, and red peppers. It is ridiculously moist and absolutely delicious. 



TUESDAY


Margarita Salmon w/ Mint Brown Rice
& Grilled Corn Salsa

2/$25 

Grilled salmon marinated in a sweet, tangy and zesty margarita sauce.  Enjoy this with a mint brown rice and grilled corn salsa. 



WEDNESDAY


Santa Fe Pork

Pulled pork Santa Fe style.  Slow cooked pork shoulder with cilantro rice, lettuce, black beans, corn, tomatoes and a sweet ranch dressing. 
THURSDAY

Jumbo Grilled Shrimp Over Basmati
w/ Pineapple Jalapeno Salsa & Grilled Corn on the Cob

2/$25
 Grilled jumbo shrimp marinated in a sweet lemongrass ginger glaze.  The fresh pineapple jalapeno salsa has both pureed jalapenos as well as chopped.   It's a clean spicy that compliments the shrimp extremely well.

Menu: Apr. 11th-14th

MONDAY

 
Crispy Cod w/ Zucchini & Peppers Orzo
& Grilled Garlic Bread

"OMG - THE ENTIRE MEAL WAS WONDERFUL!!!!  The fish was perfect (loved the sauce), the orzo was to die for (I could have eaten the entire container) and the garlic bread - what can I say delicious (I'll start grilling mine from now on) Fantastic meal!!!" - Karen

I really can't tell you what I like most about this dinner.  It could be the crunchy yet soft grilled garlic bread, the rich orzo with sweet veggies or the meaty panko & herb cod fillet that would make it easy for anyone to give up eating meat. I actually ate all my garlic bread and was half way through the orzo before I realized there was more dinner to enjoy.  You will be pleasantly surprised to know this entire dinner is butter free.  Only olive oil was used.


TUESDAY


Kung Pao Chicken w/ Noodles 

"I absolutely LOVED your take on the Kung Pao Chicken! It was delish!! And since it was homemade with fresh ingredients, I'm sure it was WAY healthier than take-out. I don't have to feel bad about eating KP Chicken, and it's one of my favorites. So thanks!!" - Amy

 
Crispy chicken tossed with a savory sweet kung pao sauce and peanuts. 
Served with stir fried veggies and noodles. (Peanuts packed separately)


 To reheat chicken, place in oven at 350/375 til crispy.  If you want to and have the time, you can also throw the peanuts in there to for a few minutes to "wake" them up. 




WEDNESDAY


Lemongrass Ribs w/ Sweet Slaw 
& Scallion Fried Rice

Baby back ribs marinated in a lemongrass barbecue sauce and sloooowly cooked until the meat nearly falls off the bone.  


THURSDAY

Crispy Ginger Fish w/ Rice Noodles

*$2/25 or 4/$45*

  I make this for a lot of our family gatherings (especially the Asian ones).  Yes, it's a whole fish, with bones and all!  If you've never tried eating fish on the bones, you definitely need to start with this.  The fish is rubbed with garlic and ginger and fried til nice and crispy.  To serve, just take a knife and lift at the two cut slits and pull apart from the bones. Place fish on top of rice noodles, salad and drizzle on some fish sauce.  
(If you're absolutely terrified of the fish head, just let me know and I'd be glad to remove it prior to packing!) 

To Reheat:  You can either bake it at 375 til crispy or do a quick broil for a few minutes.
