 BBQ Pork Chops,  Spicy Fried Rice

Santa Fe Chicken

Grilled cumin lime chicken breasts on a bed of Romaine Lettuce, Cilantro Rice, Tomatoes, Onions, Avocados, Corn and BBQ dressing.

Menu: Wednesday, June 20th














Hoisin Salmon w/ Baby Bok Choy & Sesame Ginger Noodles

"The salmon melted in my mouth (and my kids mouths). They loved it! I liked the fresh spinach too. The noodles were delicious. I was surprised that the kids liked the noodles because I tried switching to whole wheat before and they did not eat it.  I would have rank this dinner at the top along with the meatballs." - Ramona

-Salmon marinated in hoisin sauce

-Baby Bok Choy sauteed with garlic and ginger slivers
-Whole Wheat Noodles tossed with light olive oil
-Sesame Ginger Sauce

Instructions:


Reheat salmon in oven at 350 or lightly reheat in microwave. You can either eat the noodles at room temp or warm.  Place noodles in a bowl and toss with dressing. Then top with baby bok choy, salmon, sesame seeds and drizzle some more dressing on top as well.



Pulled Pork w/ Garlic Rice, Side Salad & Home Made Tortilla Chips!!!

If you're not a fan of pork, this dish might just turn you into a pork lover. It is pure torture to be in the same room while this is slow cooking for 5 hours! The pork is incredibly tender, juicy and massively savory. It goes perfectly with the Garlic Rice. And finally, to top it off are 2 sauces that totally compliment each other: Spicy Cilantro and Sweet Garlic Ranch, which you can also use for your salad dressing!
If that's not good enough, you can scoop everything up with Ai's home made tortilla chips seasoned with an amazing blend of sweet and savory spices!

Menu: Wednesday, June 13th

Crispy Ginger Fish w/ Rice Salad 
(trying rice this time, to switch it up a bit!)

"This is mine and Irene's favorite!" - Hilda

  I make this for a lot of our family gatherings (especially the Asian ones).  Yes, it's a whole fish, with bones and all!  If you've never tried eating fish on the bones, you definitely need to start with this.  The fish is rubbed with garlic and ginger and fried til nice and crispy.  To serve, just take a knife and lift at the two cut slits and pull apart from the bones. Place fish on top of rice noodles, salad and drizzle on some fish sauce.   (If you're absolutely terrified of the fish head, just let me know and I'd be glad to remove it prior to packing!) 

To Reheat:  You can either bake it at 375 til crispy or do a quick broil for a few minutes.  

Thai Chicken Salad w/ Sticky Brown Rice & Stir Fried Veggies
Chicken salad goes Thai!  Grilled chicken breast with a coconut curry dressing with hot and sticky brown rice and basil stir fried veggies.

Menu: June 5th, TUESDAY***


Crispy Caribbean Fish w/ Orange Zest Basmati 
 Mango Slaw & Peanut Ginger Dressing
(2/$25)

I made this for my mom last month for mother's day and she loved it. These fish fillets have a great ginger, curry, cumin coating and are so incredibly flaky and crispy.  Add it with the orange zest basmati and mango slaw and you have another one of Ai's refreshing summer dinner!

To reheat fish, place in oven at 350 for 10 minutes until crispy.  
Grilled Vietnamese Meatballs w/ Rice Noodles

"The meatballs were very delicious. Even my 2 kids (who really only like chicken nuggets) loved them. The combination of rice noodles, salad and fish sauce blended very well."--Ramona

Ground Turkey marinated with fish sauce, garlic, onions, carrots and scallions, formed into meatballs and grilled. Enjoy with rice noodles on top of a bed of greens, and shredded red/green cabbage, and carrots. Topped with scallions, cilantro, crushed peanuts and Vietnamese fish sauce vinaigrette.

* Peanuts packed separately.

Instructions:

Place greens on bottom, followed by rice noodles and meatballs. 
Top with crushed peanuts, scallions, cilantro and fish sauce.
