Menu: May 9th -12th

MONDAY
 


Kung Pao Chicken Noodles 

"I absolutely LOVED your take on the Kung Pao Chicken! It was delish!! And since it was homemade with fresh ingredients, I'm sure it was WAY healthier than take-out. I don't have to feel bad about eating KP Chicken, and it's one of my favorites. So thanks!!" - Amy
 
Crispy chicken tossed with a savory sweet kung pao sauce and peanuts.
Served with stir fried veggies and noodles. (Peanuts packed separately)


 To reheat chicken, place in oven at 350/375 til crispy.  If you want to and have the time, you can also throw the peanuts in there to for a few minutes to "wake" them up. 


TUESDAY

 Bacon Wrapped Pork Loin w/ Garlic Angel Hair
& Apple Pecan Salad

"Just wanted you to know that my husband and I loved this meal! It sounded like it was my husband's favorite out of everything he's had so far from you. I think that everything went really well together & the portions were great, btw - the topping was perfect!" -

Pork loin wrapped in bacon then pan seared and topped with a reduction made of caramelized onions, apples and red wine. Honey mustard vinaigrette for the salad.

Curry Dill Tilapia w/ Rice Noodles

A peanut, scallion and dill sauce on top of curry rubbed tilapia with rice noodles, cucumber lettuce mix and fish sauce.  Very delicious! Very healthy!


THURSDAY
 
Bang Bang Shrimp Tacos

2/$25

Soft tacos with crispy shrimp tossed with a spicy creamy Bang Bang sauce over cilantro rice, black beans, tomatoes, salad and a cumin cilantro sauce.   
Reheat shrimp in oven for a few minutes at 350/375 until crispy and lightly reheat tacos in microwave or oven covered up.

Shrimp & Crab Mozzarella w/ Basil Veggie Orzo
& Grilled Garlic Bread

Shrimp and lump crab meat combined with mozzarella, spinach, and red peppers. It is ridiculously moist and absolutely delicious. 



TUESDAY


Margarita Salmon w/ Mint Brown Rice
& Grilled Corn Salsa

2/$25 

Grilled salmon marinated in a sweet, tangy and zesty margarita sauce.  Enjoy this with a mint brown rice and grilled corn salsa. 



WEDNESDAY


Santa Fe Pork

Pulled pork Santa Fe style.  Slow cooked pork shoulder with cilantro rice, lettuce, black beans, corn, tomatoes and a sweet ranch dressing. 
THURSDAY

Jumbo Grilled Shrimp Over Basmati
w/ Pineapple Jalapeno Salsa & Grilled Corn on the Cob

 Grilled jumbo shrimp marinated in a sweet lemongrass ginger glaze.  The fresh pineapple jalapeno salsa has both pureed jalapenos as well as chopped.   It's a clean spicy that compliments the shrimp extremely well.

Crispy Cod w/ Zucchini & Peppers Orzo
& Grilled Garlic Bread

I really can't tell you what I like most about this dinner.  It could be the crunchy yet soft grilled garlic bread, the rich orzo with sweet veggies or the meaty panko & herb cod fillet that would make it easy for anyone to give up eating meat. I actually ate all my garlic bread and was half way through the orzo before I realized there was more dinner to enjoy.  You will be pleasantly surprised to know this entire dinner is butter free.  Only olive oil was used.

Baby back ribs marinated in a lemongrass barbecue sauce and sloooowly cooked until the meat nearly falls off the bone.

Crispy Ginger Fish w/ Rice Noodles

"This is mine and Irene's favorite!" - Hilda

  I make this for a lot of our family gatherings (especially the Asian ones).  Yes, it's a whole fish, with bones and all!  If you've never tried eating fish on the bones, you definitely need to start with this.  The fish is rubbed with garlic and ginger and fried til nice and crispy.  To serve, just take a knife and lift at the two cut slits and pull apart from the bones. Place fish on top of rice noodles, salad and drizzle on some fish sauce.  
(If you're absolutely terrified of the fish head, just let me know and I'd be glad to remove it prior to packing!) 

To Reheat:  You can either bake it at 375 til crispy or do a quick broil for a few minutes.

 BBQ Pork Chops,  Spicy Fried Rice

Bang Bang Shrimp Noodles

Lightly battered shrimp tossed with a spicy creamy Bang Bang sauce on top of whole wheat noodles, mixed greens, and julienne peppers.

Instructions:


Reheat shrimp in oven at 375 until crispy.  Toss with Bang Bang sauce.

Place the greens on the bottom, then noodles and top with coated shrimp and garnish.

Grilled Vietnamese Meatballs w/ Rice Noodles

Ground Turkey marinated with fish sauce, garlic, onions, carrots and scallions, formed into meatballs and grilled. Enjoy with rice noodles on top of a bed of greens, and shredded red/green cabbage, and carrots. Topped with scallions, cilantro, crushed peanuts and Vietnamese fish sauce vinaigrette.

Instructions:
Place greens on bottom, followed by rice noodles and meatballs. Top with crushed peanuts, scallions, cilantro and fish sauce.

If you're not a fan of pork, this dish might just turn you into a pork lover. It is pure torture to be in the same room while this is slow cooking for 5 hours! The pork is incredibly tender, juicy and massively savory. It goes perfectly with the Garlic Rice. And finally, to top it off are 2 sauces that totally compliment each other: Spicy Cilantro and Sweet Garlic Ranch, which you can also use for your salad dressing!

MONDAY




Lemongrass Chicken w/ Steamed Rice & Veggie Stir Fry

Get ready for a fantastic fantastic treat.  This is old school lemongrass chicken.  You may have a hard time finding this at restaurants.  Skinless chicken thighs are deboned then cooked with the bones, carmelized onions, garlic and lemongrass until it looks like what you see in the pic- a sweet, savory pot of tender chicken sitting in a sauce that I call liquid gold.  You will want to pour it all over your rice it's so good.  This is a dinner I can guarantee you will not have any leftovers.   


TUESDAY

 *Grilled Salmon w/ Pineapple Salsa, Coconut Brown Rice 
& Sweet Sesame Spinach Salad

Grilled salmon topped with a sweet and tangy pineapple salsa.  The sticky coconut brown rice is so good, it can almost pass as dessert.  Finish off with a healthy spinach and mushroom salad with a sweet sesame dressing.

*Shrimp & Veggie Tempura w/ Japanese Rice
& Miso Soup


"The meal last night was awesome!!! I would have eaten the whole thing if my kids didn't fight over it!!! LOL We loved it and we will definitely order that again!!! This is one of my favorite things to eat--Tempura with a bowl of steamy sticky Japanese rice and a sweet tempura dipping sauce.   Reheat tempura in the oven at 375 until crispy.  While you're waiting, you can sip on a hot bowl of miso.

Grilled chicken salad made with olive oil and mayo, topped with cranberries, sweet and crunchy pecans and crispy bacon!  There should be lots of ooo's and ahhh's tonight at the dinner table!

Saigon Sliders and Spring Rolls

Two mini turkey burgers made of ground turkey marinated with scallions, carrots, and garlic on two whole wheat buns with sweet slaw, and cilantro mayo.  Comes with two spring rolls made with whole wheat noodles, greenleaf lettuce, shredded red and green cabbage, carrots, cilantro, basil and grilled chicken.

Honey Pecan Salmon w/ Cinnamon Sweet Potatoes 
& Sauteed Broccoli

If you're a fan of those yummy sticky cinnamon buns, you are in for a treat!  Just replace the bun with a piece of salmon and you can still get the same sweet and crunchy topping without the obscene calories. The salmon is coated with honey and pecans then pan seared. This goes beautifully with the cinnamon sweet potatoes and sauteed broccoli.

 Saigon Pulled Pork w/ Rice Noodles

"I think the Saigon Pulled Pork is one of my favorite.  It's even better
then the regular pulled pork.  I was glad that my husband wasn't home last
night so I could have lunch today!" -  Irene

Pulled Pork Saigon style!  Pork shoulder slow cooked with caramelized lemongrass and garlic.  Served this at my first Dupont luncheon last Friday, and was told there were some happy eaters!  As requested,  it's on the menu this week!

Peruvian Chicken w/ Garlic Rice, Plantains and Side Salad

First, let me warn you, this is a lot of food!  I don't make this often, but I always look forward to it when I do.  This is just one way I'd like to show my appreciation for all my customers.  One whole chicken marinated in a smoky cumin sauce then slow roasted. Just go ahead and put away your forks. The best way to eat this is to rip apart the meat with your hands, then dip it in either the Sweet Ranch or the Cilantro Sauce. Follow up with a sweet piece of plantain.and the rich and savory garlic rice.  When I serve this to my family, I place the salad on the bottom of the rice and pour some sauce over it.  You will love the variety of flavors working so well together!

Chicken Piccata Spaghetti w/ Grilled Pear Spinach Salad

Get ready for a delightful combination of flavors on your plate!  Garlic sauteed chicken breasts with a creamy white wine caper sauce over spaghetti (you won't believe it's actually whole wheat!).  Although no picture available, the spinach salad can stand on its own.  Spinach, grilled pears, roasted pecans, artichoke hearts and feta tossed with a white wine vinaigrette.

Grilled marinated steak with Mexican tomato rice, green peppers, onions, lettuce, fresh salsa and sour cream.  If you like steak fajitas, but hate the greasy mess you get at some restaurants, you will be happy to know the steak and veggies are grilled, therefore, no oil and just as delicious!

Every time our family shares a calamari appetizer, I never feel like I get enough. If you know what I'm talking about, you will love this dinner. You will get an entree-sized serving of calamari with linguine and a home-made marinara sauce.

There's just so much to this, so I'm just going to list the details:
  • 4 Mini burgers made of ground turkey marinated with scallions, carrots, garlic, and fish sauce.

  • CGOA (Cilantro Garlic Olive Oil Aioli- A bit of mayo replaced with a whole lot of garlic, cilantro and olive oil)
  • 4 Spring Rolls:  Honey Ginger Chicken, Loads of Veggies, Whole Wheat Noodles & Peanut Sauce
When I served this one night, my son looked at me as if I was serving cake and ice cream for dinner.  What a fantastic meal and treat at the same time.

Those who don't feel like dealing with crowds on Valentine's Day can still have a nice dinner without spending a whole lot.  Enjoy this popular Italian dish with a side of grilled veggies, along with warm, extra crispy bread and a garlic basil dipping oil. 




TUESDAY

Extra large split chicken breasts marinated overnight in a garlic dijon dressing and baked until tender and juicy.  Potatoes roasted and tossed with olive oil, rosemary and spices.  Broccoli roasted and tossed with crunchy almonds and a sweet honey mustard dressing.

WEDNESDAY
 Grilled Honey Mustard Salmon w/ Garlic-n-Herb Brown Rice 
& Grilled Veggies

A delicious hearty-healthy dinner!  Salmon marinated in a honey mustard sauce and briefly grilled.  Served with a very moist garlic and herb brown rice.   You wouldn't believe there's absolutely no oil or butter in it.  The veggies are grilled then tossed with fresh garlic and olive oil.



THURSDAY


Oven Roasted BBQ Chicken w/ Sriracha Slaw 
& Creamy Honey Cornbread

Split chicken breasts marinated with Ai's BBQ sauce then slowly roasted in the oven 'til tender and juicy.  Comes with a sweet and slightly spicy Sriracha slaw and corn bread with a creamy honey drizzle.

There's just so much to this, so I'm just going to list the details:
  • 4 Mini burgers made of ground turkey marinated with scallions, carrots, garlic, and fish sauce.

  • CGOA (Cilantro Garlic Olive Oil Aioli- A bit of mayo replaced with a whole lot of garlic, cilantro and olive oil)
  • 4 Spring Rolls:  Honey Ginger Chicken, Loads of Veggies, Whole Wheat Noodles & Peanut Sauce
When I served this one night, my son looked at me as if I was serving cake and ice cream for dinner.  What a fantastic meal and treat at the same time.


TUESDAY

Crispy Shrimp w/ Pad Thai Noodles 
*2/$25 or 4/$45

Crispy fried shrimp on top of Pad Thai Noodles and a bed of green leaf, red/green cabbage and carrots.  Garnished with crushed peanuts, scallions, cilantro and a sweet-n-tangy coconut dressing.
Make sure you place the shrimp in the oven at 350/375 for a few minutes until crispy again. 
(Pad Thai noodles contain peanuts in the sauce.  Not recommended for those with peanut allergies.)




WEDNESDAY


Chicken Piccata Spaghetti w/ Grilled Pear Spinach Salad

Get ready for a delightful combination of flavors on your plate!  Garlic sauteed chicken breasts with a creamy white wine caper sauce over spaghetti (you won't believe it's actually whole wheat!).  Although no picture available, the spinach salad can stand on its own.  Spinach, grilled pears, roasted pecans, artichoke hearts and feta tossed with a white wine vinaigrette.
