Menu: Dec. 20th-22nd

MONDAY


Peruvian Chicken w/ Garlic Rice, Plantains and Side Salad

"Last night's dinner (Peruvian Chicken) got a huge WOW!  Definitely a keeper! " - Suzanne

I don't make this often, but I always look forward to it when I do.  This is just one way I'd like to show my appreciation for all my customers.  
Whole chicken marinated in a smoky cumin sauce. Just go ahead and put away your forks. The best way to eat this is to rip apart the meat with your hands, then dip it in either the Sweet Ranch or the Cilantro Sauce.  Follow up with a sweet piece of plantain.and some of that  rich and savory garlic rice.
When I serve this to my family, I place the salad on the bottom of the rice and pour some sauce over it.  Otherwise, the salad won't get eaten! 


TUESDAY


Shrimp & Veggie Tempura w/ Japanese Rice & Miso Soup

This is one of my favorite things to eat--Tempura with a bowl of steamy sticky Japanese rice and a sweet tempura dipping sauce. 

Instructions:

Reheat tempura in oven at 375 until crispy.

Calamari Marinara w/ Linguine & Sauteed Mushrooms/Green Beans

Every time our family shares a calamari appetizer, I never feel like I get enough. If you know what I'm talking about, you will love this dinner. You will get an entree-sized serving of calamari with linguine and a home-made marinara sauce.

Reheat calamari in oven at 375 until crispy.

Crab Cake w/ Red Pepper Penne 
& Roasted Veggies

Lump crab meat folded with spices, garlic and onion slivers.  No bread crumbs or fillers here!  It's all crab, which is how crab cakes should taste in your mouth.

Grilled Vietnamese Meatballs w/ Rice Noodles

Ground Turkey marinated with fish sauce, garlic, onions, carrots and scallions, formed into meatballs and grilled. Enjoy with rice noodles on top of a bed of greens, and shredded red/green cabbage, and carrots. Topped with scallions, cilantro, crushed peanuts and Vietnamese fish sauce vinaigrette.

* Peanuts packed separately.

Instructions:

Place greens on bottom, followed by rice noodles and meatballs. 
Top with crushed peanuts, scallions, cilantro and fish sauce.

If you're not a fan of pork, this dish might just turn you into a pork lover. It is pure torture to be in the same room while this is slow cooking for 5 hours! The pork is incredibly tender, juicy and massively savory. It goes perfectly with the Garlic Rice. And finally, to top it off are 2 sauces that totally compliment each other: Spicy Cilantro and Sweet Garlic Ranch, which you can also use for your salad dressing!

I hope you enjoy eating this as much as I did making it!

MONDAY


Santa Fe Pork

Pulled pork Santa Fe style.  Slow cooked pork shoulder with cilantro rice, lettuce, black beans, corn, tomatoes and a sweet ranch dressing.





TUESDAY



Bang Bang Shrimp Noodles

Lightly battered shrimp tossed with a spicy creamy Bang Bang sauce on top of whole wheat noodles, mixed greens, julienne red peppers and snow peas. 

Instructions:

Reheat shrimp in oven at 375 until crispy.  Toss with Bang Bang sauce.
Place the greens on the bottom, then noodles and top with coated shrimp and garnishes.
Fish sauce included to toss with noodles or drizzle over top.  




WEDNESDAY



Curry Tilapia w/ Coconut Basmati Rice & Asian Veggie Stir Fry

Tilapia fillets rubbed with garlic and curry then pan seared with olive oil. Basmati rice cooked with coconut milk then sprinkled with shredded coconut and sesame seeds for added texture and sweetness.

BBQ Ribs w/ Red Pepper Corn Pasta 
& Honey Mustard Slaw

Spare ribs slathered with lots of sauce, marinated overnight and slow cooked 'til tender.

MONDAY

Coconut Shrimp Balls w/ Basmati Rice Salad
& Peanut Ginger Sauce

"We love the coconut shrimp balls.  I like the fact that you can taste just
a hint of coconut.  And I LOVE the ginger peanut sauce.  I could have eaten

Shredded coconut and garlic added to ground shrimp and grilled.  If you love shrimp and coconut, you will definitely love this!

Instructions:

Reheat shrimp balls in oven at 350 for 6-8 minutes.





TUESDAY


Garlic and Herb Chicken with Spinach Artichoke Angel Hair
& Roasted Veggies

Split chicken breasts marinated overnight with lots of garlic and herbs then baked.  Angel hair pasta tossed with olive oil, spices, feta, artichoke hearts and spinach.  
A great way to eat this is to make 3-4 cuts along the breast then pour the garlic herb sauce and just let it flow!!!  It's so tender and juicy by itself, but the sauce makes it even better!



WEDNESDAY



Hoisin Salmon w/ Noodles & Baby Spinach Salad

"The salmon melted in my mouth (and my kids mouths). They loved it! I liked the fresh spinach too. The noodles were delicious. I was surprised that the kids liked the noodles because I tried switching to whole wheat before and they did not eat it.  I would have rank this dinner at the top along with the meatballs." - Ramona

-Salmon marinated in hoisin sauce then briefly pan seared. 
-Whole Wheat Noodles tossed with light olive oil
-Sesame Ginger dressing

Instructions:

Reheat salmon in oven at 350.  After you've warmed everything up, place noodles in a bowl and toss with dressing. Then top with baby spinach, salmon, sesame seeds and drizzle some more dressing on top as well.



THURSDAY 



Pineapple Pork w/ Sticky Rice 
& Thai Cole Slaw

Pork chops marinated overnight in BBQ sauce and pineapple juice then grilled.  The sticky rice is steamed then topped with sauteed scallions and Chinese sausage. Add Thai cole slaw and grilled pineapple wedges and you have an incredible dinner at an incredible price! 

Instructions:

The best way to warm up sticky rice is to reheat it lightly in the microwave with a slightly wet paper towel on top.  This should be the last thing you warm up.

For those of you watching your calories, you'll be pleased to know that the Fried Rice is not fried at all! No oil is used whatsoever to make it! Yet it is still moist and tastes great with the ginger chicken and stir fried veggies.

Chicken Piccata Spaghetti w/ Grilled Pear Spinach Salad

Get ready for a delightful combination of flavors on your plate!  Garlic sauteed chicken breasts with a creamy white wine caper sauce over spaghetti (you won't believe it's actually whole wheat!).  Although no picture available, the spinach salad can stand on its own.  Spinach, grilled pears, roasted pecans, artichoke hearts and feta tossed with a white wine vinaigrette.

Garlic Dijon Chicken w/ Rosemary Potatoes 
 & Roasted Broccoli/Almond Salad
 
Extra large split chicken breasts marinated overnight in a garlic dijon dressing and baked until tender and juicy.  Potatoes roasted and tossed with olive oil, rosemary and spices.  Broccoli roasted and tossed with crunchy almonds and a sweet honey mustard dressing. 

Instructions:

You can reheat the chicken and potatoes in the oven at 350/375 for 10 minutes or microwave at 90% for 1 1/2 - 2 minutes.  If you prefer your broccoli salad warm, place it in the oven (definitely do not microwave), then toss with dressing.

Menu: Nov. 8th -11th



MONDAY



Kung Pao Chicken w/ Noodles
 
Crispy chicken tossed with a savory sweet kung pao sauce and peanuts. 
Served with stir fried veggies and noodles.

*For those with allergies, peanuts are packed on the side so they can stay crunchy.

Instructions:

 Reheat chicken in oven at 350 til crispy.  If you want to and have the time, you can also throw the peanuts in there to for a few minutes to "wake" them up. Warm up noodles and veggies.

After chicken is done, toss with the peanuts and Kung Pao sauce. Use a little sauce, at a time until it is coated to your liking.  Place on top of warm noodles and veggies and enjoy!


TUESDAY

Steak Fajitas

Grilled marinated steak with Mexican tomato rice, green peppers, onions, lettuce, fresh salsa and sour cream.  If you like steak fajitas, but hate the greasy mess you get at some restaurants, you will be happy to know the steak and veggies are grilled, therefore, no oil and just as delicious!

Chicken stuffed with bacon, mushrooms, and onions.  Red potatoes mashed with garlic, olive oil and butter.  The stuffing is also combined with white wine and olive oil to make a mushroom sauce to drizzle over the chicken and mashed potatoes. 



WEDNESDAY

Bangkok Catfish w/ Flat Noodles

*2/$25
Crispy catfish on a bed of greens and scallion fried flat noodles with a spicy red curry coconut sauce.

THURSDAY

Pineapple Chicken w/ Chinese Sticky Rice
& Sweet-n-Spicy Slaw

Chicken breasts marinated in a soy/pineapple dressing.  A bamboo basket is used to steam the sticky rice to give it that earthy tropical aroma and a perfect level of sticky moistness.  Once cooked, a Chinese sausage and scallion oil is drizzled over top.  If that's not enough, you get to enjoy this with grilled pineapple wedges and Vietnamese fish sauce!

Chicken breast marinated overnight with soy, ginger and honey, then grilled. Served with one of my favorite noodle salads: noodles, nappa, red peppers, scallions, cilantro, bean sprouts and cashews (packed separately). Served with a sesame ginger sauce.

If you're a fan of the Grilled Vietnamese Meatballs dinner--think Vietnamese Meatballs hugged with a sweet and juicy grilled Hanover tomato and the reaction you have at this minute will be magnified one hundredfold when your fork cuts into this tender and juicy stuffed tomato on a bed of warm jasmine rice and a variety of greens. Some fish sauce and peanuts will send this dish over the top!

Menu: Oct. 18th - 21st

MONDAY


Chicken Pho w/ Beef Meatballs
(Pho Ga Bo Vien)

It doesn't get more Vietnamese than Pho.  Even though my grandparents operated a Pho cart in Saigon, Vietnam, I never really knew how to make this until just a few years ago. Every time I make it, I learn new tricks to make it better.

You can eat it any time of year, but you really appreciate it when it's cold outside. The broth comes from whole chickens that have been simmering in a hot steamy pot with garlic, onions, carrots, turnips and spices galore (star anise, cloves, coriander, cinnamon, cardamom). Actually, it's the spices that give Pho it's distinct flavor and sets it apart from all other Vietnamese noodle soups.

When the broth is ready, it is poured right on top of a bowl of pho noodles (flat rice noodles), chicken, meatballs, and onion slivers. Then you then add scallions, cilantro, bean sprouts. And as if that's not enough, each individual then adds a twist of lime, hoisin sauce, and Sriracha (chili sauce) to their own bowl.

 Grilled Vietnamese Meatballs w/ Pineapple Fried Rice & Sesame Ginger Salad

"My daughter packed her portion for lunch today and I've got mine for lunch as well (I think we had more meatballs last night than the last time, so we we're actually getting a dinner and two lunches out of it).  Sticky rice is a favorite in our house, so that combined with the pineapple is a big hit. Bottom line...food was excellent, as usual!" - Suzanne


The sweet/savory in the turkey meatballs is a perfect match for the sweet/tangyness in the pineapples. Finish off with a salad of greens, shredded cabbage, carrots, scallions, cilantro, toasted sesame seeds and a sesame ginger dressing.

No oil used whatsoever in the fried rice!

If you love shrimp and coconut, you will definitely love this!

Instructions:

Reheat shrimp balls in oven at 350 for 6-8 minutes.
Place greens and rice noodles in a bowl and top with shrimp, garnish and sauce.

Curry Tilapia w/ Coconut Basmati Rice & Asian Veggie Stir Fry

Tilapia fillets rubbed with garlic and curry then pan seared with olive oil. Basmati rice cooked with coconut milk then sprinkled with shredded coconut and sesame seeds for added texture and sweetness.

Lime Grilled Chicken w/ Mango Salsa, Garlic Rice & Black Bean Tomato Salad

Shrimp & Veggie Tempura w/ Japanese Rice & Miso Soup

This is one of my favorite things to eat--Tempura with a bowl of steamy sticky Japanese rice and a sweet tempura dipping sauce. 

Instructions:
Reheat tempura in oven at 350 until crispy.



TUESDAY


Kung Pao Shrimp w/ Noodles

"Your Kung Pao Shrimp was superb!! Once again, we had plenty to eat for dinner last night
and leftovers for today!"--Susan

Crispy shrimp tossed with a savory sweet kung pao sauce with peanuts. Served with stir fried veggies and whole wheat noodles.

*For those with allergies, peanuts are packed on the side so they can stay crunchy.

Instructions:

 Reheat shrimp in oven at 350 til crispy.  If you want to and have the time, you can also throw the peanuts in there to for a few minutes to "wake" them up.

Warm up noodles and veggies.

After shrimp is done, toss with the peanuts and Kung Pao sauce. Use a little sauce, at a time until it is saturated according to your liking.

Place on top of warm noodles and veggies and enjoy!











WEDNESDAY


Grilled Vietnamese Meatballs w/ Rice Noodles

Ground Turkey marinated with fish sauce, garlic, onions, carrots and scallions, formed into meatballs and grilled. Enjoy with rice noodles on top of a bed of greens, and shredded red/green cabbage, and carrots. Topped with scallions, cilantro, crushed peanuts and Vietnamese fish sauce vinaigrette.

* Peanuts packed separately.

Instructions:
Place greens on bottom, followed by rice noodles and meatballs. Top with crushed peanuts, scallions, cilantro and fish sauce.

Slow-Cooked Pork Shoulder w/ Garlic Rice, Plantains & Side Salad

If you're not a fan of pork, this dish might just turn you into a pork lover. It is pure torture to be in the same room while this is slow cooking for 5 hours! The pork is incredibly tender, juicy and massively savory. It goes perfectly with the Garlic Rice. And finally, to top it off are 2 sauces that totally compliment each other: Spicy Cilantro and Sweet Garlic Ranch, which you can also use for your salad dressing!
