Menu: Jan. 10th-13th

MONDAY

Grilled Ginger Chicken w/ Rice Noodles



The chicken is so sweet, tender and aromatic from the ginger.  You can just sit there and eat it all by itself.  This comes with fish sauce of course!





TUESDAY

Bacon Wrapped Pork Loin w/ Garlic Angel Hair
& Apple Pecan Salad (Honey Mustard Vinaigrette)


The boys in the house absolutely loved this. The apples pair great with the pork as well.  If it makes you feel any better, since we splurged with the bacon, the pork is extremely lean!  
WEDNESDAY

Lemongrass Beef w/ Rice Salad


Another dish where you could just eat the meat all by itself.  We had this with rice paper wraps for my son Mason's 1 year birthday and we all could have eaten this all night long.  Lemongrass is similar to ginger.  It gives meat a unique sweet aroma that you can't quite describe, but you can tell it's there.  Once you've eaten Vietnamese beef with lemongrass, you won't want it prepared any other way.  This also comes with fish sauce as well. 





THURSDAY

Rosemary Chicken w/ Artichoke Feta Angel Hair
& Grilled Veggies


If you like garlic, herbs and spices, this chicken is for you.   The marinade does a great job soaking into the chicken while it's slow roasting in the oven.  The meat is very tender and juicy, so just be careful not to overheat this.  In fact, when I reheat this, I place it on a skillet or grill pan with some nonstick spray and do a quick and light fry just to get it warm again.  I've found this to be the best way to reheat and still keep the chicken tender and moist.
