Menu: Jan. 17th-20th

MONDAY



Mango Tilapia w/ Basmati Rice & Black Bean/Corn Salad

Grilled tilapia topped with a sweet and slightly spicy mango salsa.    Lettuce and black bean/corn salad comes with a cilantro vinaigrette.  




TUESDAY


Kung Pao Chicken w/ Noodles 

"I absolutely LOVED your take on the Kung Pao Chicken! It was delish!! And since it was homemade with fresh ingredients, I'm sure it was WAY healthier than take-out. I don't have to feel bad about eating KP Chicken, and it's one of my favorites. So thanks!!" - Amy

 
Crispy chicken tossed with a savory sweet kung pao sauce and peanuts. 
Served with stir fried veggies and noodles.


*For those with allergies, peanuts are packed on the side so they can stay crunchy.


Instructions:


 Reheat chicken in oven at 350 til crispy.  If you want to and have the time, you can also throw the peanuts in there to for a few minutes to "wake" them up. Warm up noodles and veggies.


After chicken is done, toss with the peanuts and Kung Pao sauce. Use a little sauce, at a time until it is coated to your liking.  Place on top of warm noodles and veggies and enjoy!
 
WEDNESDAY

Crispy Ginger Fish w/ Rice Noodles

I know we're doing tilapia twice in a week, but I just couldn't resist sharing with you a favorite Garner dinner.  I make this for a lot of our family gatherings (especially the Asian ones).  Yes, it's a whole fish, with bones and all!  If you've never tried eating fish on the bones, you definitely need to start with this.  The fish is rubbed with garlic and ginger and fried til nice and crispy.  To serve, just take a knife and lift at the two cut slits and pull apart from the bones. Place fish on top of rice noodles, salad and drizzle on some fish sauce.  


To Reheat:  You can either bake it at 375 til crispy or do a quick broil for a few minutes.




THURSDAY


Pulled Pork w/ Garlic Rice, Plantains & Side Salad

If you're not a fan of pork, this dish might just turn you into a pork lover. It is pure torture to be in the same room while this is slow cooking for 5 hours! The pork is incredibly tender, juicy and massively savory. It goes perfectly with the Garlic Rice. And finally, to top it off are 2 sauces that totally compliment each other: Spicy Cilantro and Sweet Garlic Ranch, which you can also use for your salad dressing!
